About this rub
This cocoa nibs rub can also be used to coat different meats and fish to enhance their flavor, almost giving them a charcoal taste.
It can also be added as a condiment to tartares (beef, salmon and tuna) and burgers.

1 cup of cocoa nibs
1 tbsp salt
Hot pepper powder to taste (optional)
Mix all the ingredients in a food processor to obtain a rustic texture.
Generously coat your meat/fish on all sides; try with boneless chicken breasts, pork tenderloin, beef steaks, salmon fillet, white fish fillets, veal escalopes, etc.
Cook meat or fish your favorite way!
You can put this coating on fish skin (salmon or trout), chicken skin or sliced raclette cheese and bake in the oven at 350º F until crispy like chips!
