As Colombia strives to transition towards peace, cocoa is at the heart of crop substitution policies to replace coca, the basis for manufacturing cocaine.
The cocoa beans used to make this bar come from a farm that grows a unique strain of ancestral cocoa in the Arauquita province in northeastern Colombia, on the border with Venezuela.
The beans have an aromatic profile of tangerine while the fleur de sel brings out a little salted caramel side.
